Tj’s Tip – get your kids cooking!

Tj likes to do all the mixing! It makes him feel so proud and will try anything if he get to help.
I like to roast a chicken in the middle of every week. Chicken is perfect to add to all different dishes and just on its own. Also it will last for 3 days in the refrigerator.

Missing Teeth

What do you do when your child has lost 7 teeth in 3 weeks? My son TJ has lost his top 7 teeth and has 2  loose on the bottom.  Everything I give him to eat he complains that it is too hard to chew.  The only thing he wants is Mac and Cheese. At first I fought him on his dinner choice but after awhile I gave in. After all who could say no to that toothless smile and I must confess I have become quite the pro with Mac and Cheese and I have convinced him that mixing in chicken and broccoli makes it extra special!

TJ’s Chicken-n- Broccoli Mac and Cheese – Yum Yum Good!

Easiest Cheesiest Mac and Cheese

5 Servings

20 minutes

Equipment

Large pot

Colander

Measuring cups and spoons

9×12 baking dish

Spoon for mixing

Aluminum foil

Thermos

Ingredients

8 cups of water

1 tablespoon of salt

2 cups of dry macaroni

1 tablespoon of butter

2 cups of low fat milk

¼ pound of American cheese slices, about 12 slices

1 cup roasted chicken, chopped

1 cup broccoli florets

Directions

1.     In a large pot place the 8 cups of water and salt.  Bring to a boil and cook the macaroni for 8 to 10 minutes.  Drain the macaroni in the colander and pour back into the baking dish.*

2.     Add the chicken, broccoli and butter to the macaroni. Stir until it is well combined.

3.     Pour the milk over the macaroni and top with the cheese – the cheese will over lap each other.

4.     Cover the macaroni and cheese with aluminum foil and bake 30 minutes or until all the cheese has melted and the sauce is bubbly.

5.     Once out of the oven mix the macaroni and cheese to make sure that all the macaroni is well coated with cheese sauce.

Peaches Peaches Peaches!

August is national peach month and it is still not too late to get a taste of their delicious flavor!

One of my favorite memories from childhood was making homemade peach ice-cream!

Here is a simple recipe to try !

Peach Ice- Cream

INGREDIENTS
6 eggs, beaten
3 1/2 cups white sugar
12 fresh peaches, pitted and chopped
4 cups heavy cream
2 cups half-and-half cream
2 Vanilla beans scraped or 2teaspoons vanilla extract
1/2 teaspoon salt

DIRECTIONS
1.In large bowl, mix together eggs and sugar until smooth;
2. Reserve2 cups chopped peaches in a bowl and puree the remaining peaches in a blender or food processor until smooth.
3. Stir 5 cups of puree into egg mixture.
4. Stir in cream, half-and-half, vanilla and salt and mix well.
5. Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer’s instructions.
6. When the ice-cream is done stir in the 2 cups of reserved chopped peaches
